Chef Nikki Newman brings over 17 years' of food service experience with her to the Embassy Suites Mandalay Beach Resort. She was French classically trained at the Atlantic Culinary Academy in New Hampshire receiving a ‘Diploma in Le Cordon Bleu Culinary Arts’. She is joining us from the Doubletree by Hilton in Breckenridge, Colorado, where she participated in the property’s opening of a Made Market and the reinvention of their existing restaurant, transforming it into a locally inspired “Pasture to Plate” fine dining destination. Prior to the Doubletree she spent a great deal of time working with, and under, an array of up-and-coming chefs at some of Colorado’s most popular and award-winning restaurants.
In her spare time, Chef Newman can be found golfing, brewing beer, reading and of course, cooking. She grew up constantly moving from one end of the country to the other, which led to a greater understanding of regional cuisines and has influenced every area of her cooking. She has continued to travel as an adult and looks forward to learning about our part of the country; its cultures, unique touches, food, farming and offerings from the ocean.
